The Lasagna Soup That’s About to Change Your Dinner Game

< back to blog

Okay gals, can we talk about this lasagna soup for a second? Because I’m genuinely obsessed and I need you all to make it ASAP.

You know those nights when you want all the cozy, comforting vibes of homemade lasagna but you’re absolutely not about to spend an hour layering noodles and cheese? THIS IS THE ANSWER. All those rich, saucy, cheesy flavors you crave, but in a bowl you can curl up with on the couch.

The best part? It comes together in like 30 minutes. I’m talking one pot, minimal effort, maximum comfort food energy. Make it with me HERE

Here’s What You Need:

  • 2 lbs ground beef
  • 1 white onion, diced
  • 1 tsp garlic powder
  • 1 jar Yo Mama’s Marinara (truly the best!)
  • 1 (32 oz) beef broth
  • 1 cup heavy cream
  • 1½ tsp Italian seasoning
  • Salt & pepper to taste
  • 8-10 lasagna noodles, broken into pieces

For topping: ricotta, mozzarella, parmesan, and fresh basil 🌿

How to Make It:

Start by browning your ground beef with the diced onion in a large pot. Once it’s cooked through, season it with garlic powder, salt, pepper, and Italian seasoning.

Then add in your Yo Mama’s Marinara (seriously my go-to!), beef broth, and heavy cream. Give it a good stir and bring it to a simmer.

Break up your lasagna noodles into bite-sized pieces and add them right into the pot. Let everything simmer for about 10–12 minutes until the noodles are perfectly tender.

Now for the BEST part – ladle it into bowls and top with big dollops of ricotta, shredded mozzarella, grated parmesan, and fresh basil. It’s literally like eating lasagna but somehow even better?

My Honest Thoughts:

This has been on repeat at our house. It’s hearty enough that everyone feels satisfied, but it doesn’t leave you feeling heavy. Plus cleanup is a dream since it’s all one pot!

The ricotta on top? Non-negotiable. It melts into the soup and creates this dreamy, creamy situation that I can’t even describe. You just have to experience it.

Trust me when I say you need this in your dinner rotation. Make it this week and let me know what you think!
