My Go-To High Protein Lunch

This is one of my absolute favorite quick lunches! It’s my high-protein, low-calorie tuna toast I make in my Our Place Wonder Oven. It’s one of those easy meals that checks all the boxes, filling, balanced, and made with ingredients you probably already have at home.

It’s only 295 calories and packs in 33 grams of protein, which means it keeps me full all afternoon without that heavy, weighed-down feeling. This is my go-to when I want something nourishing but simple. There’s no cooking required other than toasting a slice of bread.

Ingredients for one serving

1 slice of Dave’s Killer Bread 110 calories, 4g protein (Any hearty whole grain bread works, but this one has extra protein and fiber, so it’s my favorite.)

1 packet of StarKist Light Tuna 70 calories, 17g protein 

¼ cup plain Greek yogurt 30 calories, 6g protein (You can use mayo, I just love the added protein the yogurt gives.)

1 teaspoon Dijon mustard 5 calories

1 tablespoon sweet relish 10 calories

1 hard-boiled egg, chopped 70 calories, 6g protein 

Salt + pepper to taste

Directions

  1. Toast your bread until golden and crisp. I usually use a medium setting in my Our Place Wonder Oven so it stays sturdy under the toppings.
  2. Mix your tuna salad. In a small bowl, combine the tuna, Greek yogurt, Dijon mustard, and relish. Stir until everything’s evenly mixed and creamy.
  3. Add the egg. Chop up a hard-boiled egg and gently fold it into the tuna mixture.
  4. Season with salt and pepper to taste.
  5. Assemble your toast. Spoon the mixture on top of your toast and spread evenly. 

It might not be the prettiest, but it’s so good. Creamy, tangy, filling, and full of protein.
