Simple Broccoli Cheddar Soup Recipe

This creamy broccoli cheddar soup is warm, cheesy, and super easy to make. Perfect for a cozy meal any day of the week! Recipe from Cooking Classy.


Ingredients

  • 6 Tbsp butter
  • 1 cup chopped yellow onion
  • 1 clove garlic, minced
  • 1/4 cup + 3 Tbsp all-purpose flour
  • 3 1/4 cups low-fat milk (plus more if needed)
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1/2 cup heavy cream
  • 3 cups chopped fresh broccoli florets
  • 10 oz sharp cheddar cheese (plus extra for topping)
  • 1/3 cup Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook Onions and Garlic:
    Melt butter in a large pot over medium heat. Cook onions for 4-5 minutes until soft, then add garlic and cook for 1 more minute.
  2. Make the Roux:
    Stir in the flour and cook for 1 minute while stirring constantly.
  3. Add Liquid and Broccoli:
    Slowly whisk in milk and chicken broth. Add broccoli and simmer until the soup thickens and broccoli is tender (about 6-8 minutes).
  4. Add Cream and Cheese:
    Remove from heat. Stir in heavy cream, cheddar, and Parmesan until melted. Season with salt and pepper.
  5. Serve:
    Ladle into your bowl, top with extra cheese, and enjoy!
