Ingredients
- 6 Tbsp butter
- 1 cup chopped yellow onion
- 1 clove garlic, minced
- 1/4 cup + 3 Tbsp all-purpose flour
- 3 1/4 cups low-fat milk (plus more if needed)
- 1 (14.5 oz) can low-sodium chicken broth
- 1/2 cup heavy cream
- 3 cups chopped fresh broccoli florets
- 10 oz sharp cheddar cheese (plus extra for topping)
- 1/3 cup Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook Onions and Garlic:
Melt butter in a large pot over medium heat. Cook onions for 4-5 minutes until soft, then add garlic and cook for 1 more minute. - Make the Roux:
Stir in the flour and cook for 1 minute while stirring constantly. - Add Liquid and Broccoli:
Slowly whisk in milk and chicken broth. Add broccoli and simmer until the soup thickens and broccoli is tender (about 6-8 minutes). - Add Cream and Cheese:
Remove from heat. Stir in heavy cream, cheddar, and Parmesan until melted. Season with salt and pepper. - Serve:
